Preheat oven to 250 degrees F. Place popcorn in a large bowl or pot.
In a saucepan over medium heat, melt butter while stirring in brown sugar, corn syrup and salt. Wait until mixture begins to boil, stirring constantly until it’s boiling.
Once it’s boiling, stop stirring for 4 minutes.
Remove from heat and stir in baking soda and vanilla extract.
Pour caramel mixture over popcorn on a baking sheet lined with Parchment Paper, then stir popcorn and caramel together until coated. (*Tip* be sure to line baking pan with parchment paper to avoid scrubbing caramel off your pan 😉)
Put chocolate bars in plastic bag and close. Then melt the bars by running warm water over chocolate until melted. Once melted, cut one end of the bag and drizzle the chocolate over caramel corn.
Bake for one hour @ 250 degrees and be sure to take out of the oven every 15 minutes to stir. After it’s done baking, let it cool then enjoy!
