Ingredients

1 & half cup Blanched Almond Flour

3/4 Ground or Fresh Ginger

Pinch Of Salt

2 tbsp of Pure Maple Syrup

Juice from 1/2 of a Lemon

2 tbsp of Raw Almond Butter
-
3 tbsp Coconut Oil (Not Melted)

1 Cup Frozen Organic Wild Blueberries (Fresh will work also)

1 tbsp Chia Seeds
-
Juice from 1/2 a Lemon

Unbleached Parchment Paper
Directions
Mix all cookie ingredients together until well combined.
Place in fridge for 15 mins. While dough is refrigerating make jam by warming blueberries in a small sauce pan on medium low.
Crush with a fork once soft.
Add chia seeds, Lemon juice (and maple syrup if desired) and stir.
Let cool (it'll continue to thicken as it cools) form cookies and make thumbprint.
Bake at 350 for 10 mins.
Then add jam into thumbprint and lemon zest if desired. Enjoy warm or chilled!
